I love this time of year, because it's the easiest time to eat freah! Farmers markets and farm stands have plenty of fresh fruits and vegetables such as beans, tomatoes, and zucchini.
If, like most Americans, you struggle to get in your 5-9 servings of fruits and vegetables daily, you should try to add just one more serving daily. At breakfast, think about adding banana slices to your cereal or a handful of berries to your morning yogurt. At lunch, add baby carrots and pepper strips for an easy side dish. Having a salad for lunch can net you 2-3 servings in one meal! At dinner, try grilled or roasted vegetables; they can cook right alongside your main entrée.
If you are still struggling to get in your daily servings, try a smoothie. Get out your blender and start adding! For best results, start with a recipe and remember the 60/40 formula: Use 60% fruits and 40% leafy greens. And blend in two sessions -- Start with the leafy greens and base liquid and blend until you can no longer see the leafy greens. Then, add your remaining ingredients and blend again.
